If you’re tired of the same old taco routine, chorizo tostadas are about to rock your world with their bold textures and amazing taste!

Tostadas de chorizo are made of a crispy corn tortilla base, generously layered with savory chorizo sausage, creamy refried beans, and a vibrant dance of toppings like cool lettuce, tomatoes, onions, and creamy avocado salsa.

The beauty of this recipe is its versatility. Craving something extra? Add a dollop of sour cream, some pickled jalapeños for a fiery kick, or even a fried egg for richness.

Ingredients

  • Tostada shells: I prefer making the tostada shells at home, but for convenience, you can also buy the crispy shells at any Mexican grocery store or on Amazon.
  • Mexican chorizo: The star of the show! Packed with smoky, paprika-infused flavor and a spicy kick. You can find this ingredient at Mexican supermarkets or make my chorizo recipe.
  • Refried beans: They provide the creamy, savory counterpoint to the spicy chorizo.
  • Veggies: Red onions, shredded lettuce, and tomato slices were my choice for this tostadas de chorizo recipe.
  • Cheese: As for many Mexican antojitos, I prefer queso fresco over other types of cheese, but of course, feel free to use any type of cheese you prefer.
  • Salsa: Many salsa recipes go perfectly with tostadas, I opted for an easy-to-make guacamole salsa.

How To Make Chorizo Tostadas

Step 1. Make the quick guacamole salsa

Place green chilies, onions, cilantro, and garlic in a blender or food processor. Blend at high for 1 minute.

Add avocado, lime juice, and salt, then pulse for a couple of times until you desired consistency. Adjust with salt to taste and then place the salsa on a bowl and set aside.

Step 2. Cook the chorizo sausage

Heat the oil on a frying pan over low heat. Add chorizo and cook stirring constantly for 10 minutes or until chorizo gets a little crispy.

Place the cooked chorizo in a bowl and set aside.

Step 3. Assemble the tostadas de chorizo

Place tostada shells on a serving plate. Spread refried beans on each tostada and then spoon the cooked chorizo on top.

Add lettuce, onion, and sliced tomatoes. Then drizzle with guacamole salsa, sprinkle crumbled cheese on top, and serve your chorizo tostadas immediately.

Recipe Tips And Notes

  • Saute the chorizo until it releases its fat and browns slightly. Don’t overcook it, as it can become dry.
  • Use other types of pureed legumes instead of refried beans, such as chickpeas, or lentils.
  • Use other types of salads or lettuce, for example, red cabbage or this Mexican cabbage salad.
  • Assemble your chorizo tostadas just before serving to ensure the shells stay crispy.
  • Other types of creamy salsas such as cilantro lime crema or peanut salsa are perfect to drizzle over tostadas.
  • Set out all the ingredients (tostadas, chorizo, beans, toppings,sauces) and let everyone assemble their own tostadas like a taco bar.
  • Can’t find tostada shells where you live? No problem, use regular corn tortillas, just fry them until crispy, or brush them with a little olive oil and bake them at 400°F/200°C until crispy.

Accompaniments

Drinks: Pair your tostadas with classic Mexican beverages like agua fresca, horchata, or a traditional Michelada (beer with lime juice, clamato juice, and spices).

Chorizo Tostadas

Ingredients 

  • 8 tostada shells
  • 1 pound Mexican chorizo
  • 1 Tablespoons olive oil
  • 2 cups refried beans
  • 2 cups lettuce (shredded)
  • 1 small red onion (sliced)
  • 1 large tomato (sliced)
  • ½ cup queso fresco (or other kind of cheese)

For quick guacamole salsa

  • 1 ripe avocado
  • 1 jalapeño pepper (stem and seeds removed)
  • ½ small white onion
  • 1 small bunch of cilantro
  • 1 garlic clove
  • salt (as needed)
  • ½ lime (juice)

Instructions

  • Place jalapeño pepper, onions, cilantro, garlic, and ¼ cup of water in a blender or food processor. Blend at high for 1 minute.

    Perfect! Loved the recipe, I made the chorizo tostada exactly as in your photos, plus, I made more spreading mashed potatoes instead of beans (because my husband doesn’t like beans) and they were also delicious.
    I bought another brand of tostadas, but next time I wanna try making my own at home.
    Oh! and the green sauce was a big HIT, everyone loved it.
