A delicious and simple arugula salad with apples, perfect to have it as a quick lunch or as a light and healthy dinner. The sour and sweet dressing is a nice touch for this salad and it can made in so little time.

Even though I wouldn’t say this arugula salad with apples is Italian nor Mexican (as most of my recipes in this blog), I wanted to share it anyway.

Rucola (arugula) in Italy is a big deal. Is served almost every day in so many ways. A classic salad that you can find in every restaurant menu is Insalata mista (mix salad) which is nothing more than a mix of vegetables such as lettuce, carrots, bell peppers and of course, arugula.

Rucola is served mostly in a simple way: Tossed with a good extra virgin olive oil, salt and balsamic vinegar. Sometimes to the mix is added also Parmigiano flakes which adds a nice salty flavour to the salad.

But not only, arugula is also used to stuff sandwiches, pizzas and piadina. My favourite pizza is focaccia con rucola e parmigiano. Have you ever tried it?

The ingredients

The ingredients for this arugula salad with apples and celery are so simple: Rocket (arugula), apple and celery, the extra crunchy touch is added by pecans and toasted bread (croutons), but the strong point is undoubtedly the delicious citrus-based dressing (lemon and orange) that in addition to a particular flavor gives also a delicious aroma to the salad.

If you want a slightly different version you can add another type of nuts such as pine nuts or toasted hazelnuts, also another type of cheese, our favorites are parmigiano flakes or gorgonzola.

The Recipe in 1, 2, 3

  1. Prepare dressing in a mason jar by adding all ingredients, closing the lid and shaking vigorously until combined. Taste and adjust flavor as needed.
  2. In a large bowl place the arugula, apples and celery. Add croutons, pecans and then Feta cheese.
  3. Pour the dressing and toss to combine. Serve immediately, maybe along with soft Jalapeno Cheddar Biscuits.

Ingredients 

  • 5 oz (125 gr) bag of arugula
  • 1 large (200 gr) apple (cored and sliced)
  • 5.3 oz (150 gr) Celery (diced)
  • ½ cup (80 gr ) Feta cheese (crumbled)
  • ¼ cup (50 gr) Pecans (chopped)
  • 1 ½ cup (80 gr) homemade croutons (or use store bought)

For the Vinaigrette

  • 2 ½ Tbsp (30 gr) extra virgin olive oil
  • 2 Tbsp lemon juice
  • 2 Tbsp orange juice
  • 1 Tbsp vinegar
  • 1 Tbsp honey
  • 1 tsp ground pepper
  • Salt (to taste)

Instructions

Notes
