Creamy Kiwi Popsicles With Chia

These kiwi popsicles are packed with the bright, tangy flavor of kiwi, the chewy texture of chia seeds, and the creamy coolness of coconut milk. They’re the perfect way to cool down on a hot day.

You gotta cool down on a hot day, right? Forget those sugary ice pops from the store! Let’s go for a lighter and budget-friendly option to enjoy this summer.

I got inspired to make those popsicles from my hometown in Mexico where they make these creamy and amazing paletas de kiwi that street vendors will offer cheaply.

I used to buy them after school on my way home, sometimes it will be this flavor, other times I’ll opt for paletas de mango or watermelon paletas because oh boy, in the coast town where I am from, it can get pretty hot during summer!

Anyway, I had just 2 kiwis at home and wanted to make kiwi popsicles, so instead of blending the fruit I opted to add it sliced and the result was amazing!

You got the delicious milky and creamy flavor but with some chunks of kiwi on each bite.

Also, the addition of chia seeds made this frozen treat have a fantastic chewy texture that I loved.

How to Make Kiwi Popsicles

Creating the Creamy Base

You’ll need a large mixing cup, a whisk, a spoon, and a measuring spoon.

Pour the condensed milk, whole milk, and vanilla extract into the large mixing cup. Whisk these ingredients together until well combined.

Slowly add the chia seeds one teaspoon at a time while constantly stirring the mixture. This helps prevent clumping and ensures the chia seeds are evenly distributed.

If you prefer sweeter kiwi popsicles, add more condensed milk or sugar a little bit at a time until it reaches your desired level of sweetness. Remember, the kiwis will add some natural sweetness as well.

Once satisfied with the sweetness, cover the mixing cup and place it in the freezer for 2 hours. This allows the mixture to thicken slightly as the chia seeds absorb the liquid.

Preparing the Kiwi Layer

  1. Peel the kiwis and cut them into thick slices. I like to cut them about ½ inch thick, allowing for a nice bite of kiwi in each popsicle.
  2. For easier filling later, lay the popsicle molds horizontally on a flat surface. This ensures the open side of the mold faces you, rather than being on top.
  3. Carefully place the kiwi slices inside each mold.
  4. Once the kiwi slices are arranged, place the molds back in the freezer for 15-20 minutes. This allows the kiwi slices to freeze slightly, helping them stay in place when you add the creamy base.

Assembling and Freezing the Popsicles

After 2 hours, take the milk mixture out of the freezer. You might notice some ice crystals have formed. Don’t worry! Simply use a hand whisk to break them up until the mixture becomes smooth and creamy again.

Now comes the fun part! Take the molds out of the freezer and carefully fill each mold with the creamy chia mixture, ensuring you reach all the way to the top.

Close the popsicle molds tightly (if using reusable molds with lids) and insert a popsicle stick into each filled mold.

Place the filled molds back in the freezer and let them freeze for a minimum of 3-4 hours, or until completely solid.

Tips & Tricks For Success

  • If you don’t want to use whole milk, you can substitute it with plant-based milk like almond milk or oat milk.
  • For a more intense kiwi flavor, you can blend some of the kiwis into the creamy base before adding the chia seeds. But make sure to use 3 kiwis instead of 2.
  • Want to add a bit of crunch to these kiwi popsicles? Before filling the molds with the creamy mixture, sprinkle a little chopped nuts or granola on top of the frozen kiwi layer.
  • Once frozen, you can run the molds under warm water for a few seconds to loosen the popsicles before removing them.

Equipment

  • Popsicle mold

Ingredients 

  • 2 kiwi fruits
  • 1 ¾ cups unsweetened coconut milk
  • ¾ cup whole milk (or a vegan substitute)
  • ½ cup sweetened condensed milk (read notes)
  • 2 Tablespoons chia seeds
  • ½ teaspoon coconut extract (or vanilla extract)

Instructions
 

  • Place condensed milk, coconut milk, and coconut extract in a large mix cup. Add the chia seeds one teaspoon at time while stirring continuously until nicely mixed in.
  • Taste and adjust swetness by adding more condensed milk or sugar if needed. Cover the cup and place in the freezer for 2 hours (let it thicken slightly).
  • Peel the kiwis and cut them into thick slices. Place the molds horizontally so the open side will be on the side and not on top. Then arrange the kiwi slices inside the molds and place them in the freezer for 15-20 minutes.
  • After 2 hours, stir the milk mixture with a hand whisk to break the ice crystals. Then fill the molds with the creamy mixture to the top.
  • Close the mold and insert the popsicle sticks, then freeze until solid (about 3-4 hours).
