These kiwi popsicles are packed with the bright, tangy flavor of kiwi, chewy chia seeds, and creamy coconut milk. They're the perfect way to cool down during the warm season.
Place condensed milk, coconut milk, and coconut extract in a large mix cup. Add the chia seeds one teaspoon at time while stirring continuously until nicely mixed in.
Taste and adjust swetness by adding more condensed milk or sugar if needed. Cover the cup and place in the freezer for 2 hours (let it thicken slightly).
Peel the kiwis and cut them into thick slices. Place the molds horizontally so the open side will be on the side and not on top. Then arrange the kiwi slices inside the molds and place them in the freezer for 15-20 minutes.
After 2 hours, stir the milk mixture with a hand whisk to break the ice crystals. Then fill the molds with the creamy mixture to the top.
Close the mold and insert the popsicle sticks, then freeze until solid (about 3-4 hours).
Notes
You can substitute whole milk with plant-based milk like almond milk or oat milk.
For a more intense kiwi flavor, you can blend some of the kiwis into the creamy base before adding the chia seeds. But make sure to use 3 kiwis instead of 2.
Before filling the molds with the creamy mixture, sprinkle a little chopped nuts or granola on top of the frozen kiwi layer for a bit of crunch.
Once frozen, you can run the molds under warm water for a few seconds to loosen the popsicles before removing them.
