15-Minute Tostadas de Surimi

These tostadas de surimi are perfect when you’re in a rush, whether it’s for a casual family lunch or when friends pop by unexpectedly. They look impressive, but the secret is they’re ridiculously easy to throw together.

I have a soft spot for tostadas because they remind me of summers growing up in Mexico. We’d gather around the table with bowls of toppings and everyone piling on what they liked best.

I think tostadas de surimi became one of my favorites because of their bright and zesty flavors. You take one bite, and it’s like a mini celebration in your mouth.

For those who might not know, surimi is like the undercover superhero of seafood. It’s made from fish (usually white fish), but it’s crafted to mimic crab’s delicate flavor and texture.

So, if you’re craving a little taste of the ocean without breaking the bank, surimi is your best friend. It’s affordable, delicious, and you can find it practically anywhere.

Plus, it doesn’t need cooking—perfect for those days when turning on the stove feels like too much effort!

Let Me Tell You Why This Recipe Works

  • It’s quick—seriously, 15 minutes from start to finish, tops.
  • It’s fresh and vibrant—perfect for those warm days when you just want something light.
  • It’s versatile—you can dress it up or keep your tostadas de surimi simple, depending on what you have at home. And you can use store-bought or homemade tostada shells.
  • And let’s be real, it’s a crowd-pleaser. Serve these as an appetizer, and watch them disappear faster than you can say ¡Buen provecho!

How to Make Tostadas de Surimi in 15 Minutes

Prepare the surimi: Start by cutting the surimi into small, bite-sized pieces. Place them in a medium bowl where all the ingredients will come together.

Chop the veggies: Cut the tomatoes into quartered wedges, dice the avocado into chunks, slice the red onion into thin strips, and cut the jalapeño peppers into strips (remember to remove the seeds for less heat, unless you love spicy flavors). Add all the veggies to the bowl with the surimi.

Season the mix: Drizzle the olive oil over the mixture, then squeeze the lime juice directly into the bowl to keep everything fresh and zesty. Sprinkle in the oregano, chopped cilantro, and a good pinch of salt. Gently mix everything together until the surimi and vegetables are evenly coated in the seasonings. Be careful not to mash the avocado!

Assemble the tostadas: Lay out the tostada shells on a serving platter. Generously spoon the surimi mixture onto each tostada, spreading it evenly so every bite is packed with flavor.

Serve and enjoy: For the perfect finishing touch, add a few drops of your favorite hot salsa on top, or serve it on the side for anyone who loves an extra kick. Serve immediately to keep the tostadas de surimi crisp and fresh.

How to Store Leftovers

If you have any leftover surimi mixture (but let’s be honest, it might be gone in a flash!), here’s how to store it so you can enjoy it later:

Place the leftover surimi and veggie mix in an airtight container. Squeeze a little extra lime juice on top before sealing it—this will help keep the avocado fresh and prevent it from browning. Store it in the refrigerator for up to 2 days.

Tostada shells don’t play well with moisture, so make sure to store them separately in their original package or an airtight container. This keeps them crispy and ready to go when you’re ready for round two!

Pro Tip: If you’re out of tostadas, the leftover mixture makes a delicious filling for tacos, wraps, or even as a topping for a crisp salad. Nothing goes to waste here!
