Instructions
Cut the surimi into small bites and place in a medium bowl.
Add tomatoes, avocado, onion, cilantro, and jalapeno peppers. Drizzle the olive oil and squeeze the lime juice.
Season with oregano and salt, mix until everything is nicely coated with the seasonings.
Place the tostada shells on a platter and distribute the surimi mixture on top of each.
Serve immediately with a few drops of your favorite hot salsa.
Notes
Let the mix sit in the fridge for a few minutes before assembling—it’ll taste even fresher and more flavorful.
Mix everything first, then fold in the avocado last to keep it from getting mushy.
Assemble just before serving to keep the tostadas crispy and fresh.
