These New Mexico Stacked Enchiladas feature corn tortillas soaked in a mildly spicy enchilada sauce, layered with flavorful beef and cheese, and then stacked to perfection.  Learn how to do it in 5 easy steps!

Step 1: Prepare the spicy enchilada sauce by mixing spices with chicken stock, then set aside. 

Step 2: Cook seasoned beef and onions until browned, creating the flavorful meat filling. 

Step 3: Layer crispy-edged tortillas with meat and cheese, repeating for three layers. 

Step 4: Top stacks with sauce and cheese, then broil until bubbly and golden. 

Step 5: Serve hot, each stack crowned with a fried egg, drizzled with more sauce, and garnished with onions, queso fresco, and Mexican crema.
