Loaded Doritos Nachos With Chipotle Chicken
Fully loaded Doritos nachos will become your favorite game day appetizer. The recipe features some Mexican classics like pico de gallo salsa and a delicious, juicy chicken chipotle made in only 10 minutes!
I made those Doritos nachos some weeks ago to serve as a quick and easy appetizer in a dinner with friends in our garden. They were a total hit!
The ingredients
- DORITOS – There are various flavours for Doritos, like flaming hot, spicy ranch, lime, sweet chili, jalapeño, and even taco flavor. I think you will find different types also in each country. I used “Tex-Mex Doritos” because those are the only ones that my local supermarket sells, but you can make this recipe with any type of Doritos available where you live.
- MELTY CHEESE – I used a Mexican blend cheese, but actually you can use any kind of melty cheese you have on hand. Monterey Jack, Colby, and Cheddar are good options, so is Oaxaca, Asadero, Provolone, Fontina and Mozzarella filante.
- CHIPOTLE CHICKEN – Seasoned chicken cooked in a pan and chopped. I’ll leave you the recipe below but feel free to use shredded chicken or turkey leftovers (rotisserie chicken works wonderful in this recipe).
- PICO DE GALLO – Again, I’ll leave a quick recipe below or you can check out our video for pico de gallo here.
- QUESO & CREMA – For an extra Mexican touch, I used Mexican crema that you can sub with sour cream or just regular cream, and queso fresco. Those 2 ingredients are totally optional, so feel free to leave them out.
Make the pico de gallo salsa
Chop tomatoes, onions, cilantro and jalapeño pepper. Place in a medium bowl. Season with salt and add the lime juice, mix to combine and adjust salt to taste. Set aside.
Make the chipotle chicken
- Season the chicken with salt, pepper, cumin, and chipotle powder (or use smoked paprika).
- Heat a cast iron skillet until smoky, add oil and then add chicken. Cook until browned and cooked through.
- Remove chicken from the skillet and place in a cutting board. Chop it and cover with foil until needed.

Even though those Doritos nachos are superb with the simple toppings we suggest, here are more ideas for you to use and twist this recipe:
Salsas:
- Tomatillo salsa verde.
- Mango pico de gallo (another fresh salsa with a nice, sweet kick).
- Guacamole (you can go wrong with this Mexican classic).
- Molcajete salsa (if you like spicy salsas, you might love this!).
- Fake guacamole (out of avocados for real guacamole? try this recipe!).
Proteins:
- Cueritos (Mexican pickled pig skins).
- Tinga de pollo (shredded chicken simmered in a chipotle sauce).
- Chilorio (shredded pork in a spiced salsa).

Loaded Doritos Nachos
Ingredients
For nachos
- 2 bags Doritos (6 oz /170g each)
- 1 cup shredded melty cheesy (Mexican blend, Monterey Jack, Cheddar, etc.)
- ½ cup Mexican crema (or sour cream)
- ½ cup Queso fresco
For the chicken chipotle
- 10 oz chicken breast (bonless and skinless)
- 2 tsp chipotle powder (or smoked paprika)
- ½ tsp cumin powder
- salt and pepper (to taste)
- 1 Tbsp olive oil
For pico de gallo
- 1 large tomato (diced)
- ½ medium onion (chopped)
- 1 jalapeño pepper (seeded and chopped)
- small bunch cilantro (chopped)
- 1 lime (juice)
- salt (to taste)
Instructions
Make the pico de gallo
- Place all ingredients on a bowl.
- Add lime juice and season with salt.
- Mix to combine and set aside.
Make the chipotle chicken
- Season chicken with chipotle powder, salt, pepper, and cumin.
- Heat the oil in a cast iron skillet and cook the chicken for 8-10 minutes or until browned and cooked through.
- Remove chicken from the skillet and place in a cutting board. Chop it and cover with foil until needed.
Assemble the Doritos nachos
- Preheat your oven to 350°F (175°C).
- Place half of the Doritos in a single layer in a baking sheet and then add a layer with half of the chopped chipotle chicken.
- Add cheese on top and then make another layer with the remaining Doritos, chicken and more cheese on top. Pop in the oven until cheese is melted (about 4-5 minutes).
- Top the Doritos Nachos with the pico de gallo salsa, drizzle with cream, and add crumbled queso fresco on top. Serve immediately.

Very nice idea recipe. I didn’t have all ingredients for the toppings, but used the recipe for the chicken and it was AMAZING! My kids loved those doritos nachos, even if it was a bit spicy :)
