This fried spaghetti recipe is extremely easy to make. A super quick Italian recipe featuring spaghetti leftovers tossed with cheese and eggs and fried to perfection.

Is this a frittata?

Yes, and it couldn’t be any other way. Italians have figured out what to make with all those pasta leftovers and that is Frittata! A savory cake made with pasta leftovers, eggs, and whatever your heart desires.

I made this fried spaghetti frittata using what was left of a large pan of pasta with tomato sauce, but even if it’s not normal for us to have pasta leftovers, sometimes I just like to cook a little bit more so we end with some leavings and make this recipe the next day.

My husband loves this spaghetti frittata for lunch, and sometimes he likes to stuff two pieces of homemade bread or focaccia and make a panino with it.

Best tips to make fried spaghetti

Use the right cookware – A no stick-pan is the best cookware to make fried spaghetti frittata. You’ll notice that using those pans allows you to use a smaller amount of oil than if you use a regular pan.

Use the right pan size – If you use a large pan and little ingredients you’ll end with some sort of spaghetti pancake. Fried spaghetti frittata is thick.

Hydrate the spaghetti – Allow the spaghetti to sit a bit in the egg mixture to allow re-hydration.

Cover the pan – If you want your frittata to be crunchy outside and tender inside, cover the pan and cook over low heat, allowing the eggs to cook thoroughly without burning or remaining mushy.

Top with veggies – I love to top my frittata with fresh tomatoes and basil, also some crumbled cheese like feta or queso fresco will add a nice touch.

Can be made with other types of pasta?

Yes, yes, yes! I’ve made this recipe using other pasta recipes, such as Spaghetti alla Nerano, or pasta peperonata. But my favorite will always be spaghetti alla puttanesca!

The ingredients

We are using just a few ingredients because we like to keep things simple. Only spaghetti leftovers, eggs, some crumbled cheese, a bunch of basil (or use parsley too), and season with salt and pepper. It couldn’t be simpler than this!

But you can make your version of this recipe with anything you want or have available. For example, you can add some chopped bell peppers, onions, mushrooms, or even bacon or ham roughly chopped. This really is a versatile recipe.

Fried Spaghetti Recipe

  • Crack the eggs in a large bowl. Add salt, pepper, and basil. Mix until everything is combined.
  • Add the spaghetti and cheese to the bowl, mix to coat and let it sit for 5 minutes.
  • Heat the oil in a non-stick frying pan. Place the spaghetti mixture and shake the pan to distribute evenly.
  • Cover the pan and turn the heat to the lowest. Cook for 15 minutes or until you see the bottom is lightly browned and crisp.
  • Turn the heat to medium-high and cook the other side of the frittata by flipping it (about 5 minutes).
  • Slide the frittata onto a platter and let it cool to room temperature.
  • Garnish with fresh tomatoes, Feta cheese, and basil before serving.
