Big Mac Quesadillas are a tasty appetizer inspired by the famous fast food burger. The quesadilla recipe uses flour tortillas instead of buns and is filled with a delicious mixture of ground beef.

To complete this dish, the quesadillas are served with pickles, onions, lettuce, and a special big mac sauce!

Ingredients

  • Flour tortillas: Use medium-sized or small depending on your preference. Bear in mind you will cut it into halves.
  • Ground beef: I use lean ground beef, but feel free to use any type you prefer.
  • Cheese: American cheese is the best option for a Big Mac authentic taste but you are welcome to use any type of cheese. You will also need shredded melty cheese like Monterey Jack or Mozzarella.
  • Lettuce & onion: Shredded lettuce and diced onions for a crunchy sensation on these Big Mac quesadillas. You can use white or yellow onions, as per the lettuce, the Iceberg type is recommended.
  • Olive oil: You will need oil to saute the ground and also toast the tortillas. You can substitute it with butter if you prefer. 
  • Salt and pepper to taste.

The ingredients for the special Big Mac sauce are quite simple and easy to put together. You will need mayonnaise, ketchup, mustard, pickle relish, apple cider vinegar, garlic & onion powder, and salt.

How To Make Big Mac Quesadillas

Place all ingredients for the special sauce in a medium bowl and mix well to combine. Adjust seasoning to taste and transfer the sauce to a serving bowl or a squeeze bottle. Set aside until needed.

Heat 2 tablespoons of olive oil in a skillet over medium heat.

Add ground beef, and season with salt and pepper to taste. Cook breaking the meat with a spoon until the beef is nicely cooked through (about 10 minutes). Turn off the heat.

TOP TIP: Cover the pan to keep the hamburger meat moist and juicy!

Now, heat a bit of oil in a skillet over medium heat.

Add one tortilla and place 1 slice of American cheese, followed by some shredded cheese, and then with some cooked hamburger meat.

Sprinkle some diced onions, and drizzle with the special sauce. Follow with more shredded cheese on top and 1 more slice of American cheese.

Use a spatula to fold the tortilla into a half-moon and cook until nicely crispy on both sides (about 1 minute per side).

Repeat with the remaining tortillas and ingredients to make 3 more quesadillas.

Slice each big mac quesadilla into 2 triangles and serve with some lettuce, pickles, and more sauce on the side.

Expert tips & notes

  • Be careful not to burn the tortillas. Cook each side for up to 1 or 2 minutes until golden brown or just enough for the cheese to melt 
  • If you are making this quesadilla recipe for a crowd then you can use the oven instead, this way you will make more in one go.
  • Make the special sauce ahead of time for more enhanced flavor.
  • For a Mexican twist, add some pickled jalapeños to the big mac sauce, it adds a nice mild-spicy kick!

Storage & reheating tips

  • In case you have any leftovers, wrap the quesadilla with cling film or put them in an air-tight container and they will stay in the fridge for up to 3 days.
  • To reheat, you can use a preheated oven, a pan on medium heat, or an air fryer. Reheating in the air fryer will restore the crunchiness of the tortillas.
  • You can prep big mac quesadillas ahead of time by cooking the ground beef and storing it in an airtight container and then in the fridge. The special sauce as well, then assemble together when needed.

FAQ

Why are my quesadillas not crunchy?

It could be that you are putting too much fat on the pan, you need just enough to coat the bottom of the pan.

Should quesadillas be crunchy or soft?

When they are hot from the pan, the quesadillas tend to be crunchy but when they cool down they become gooey.

  • 4 medium flour tortillas (or 8 small)
  • ½ lb lean ground beef
  • 8 slices American cheese
  • 1 cup shredded melty cheese
  • ½ cup onion (diced)

For the special sauce:

    I made this recipe with the leftovers of your big mac tacos lol but I think I added too much meat because my quesadilla fell apart when I tried to fold it, so I ended making it with two tortillas, one over the other lol and it was perfect!
