This creamy Mexican Postre de Durazno is loaded with juicy peaches, gelatin cubes, tapioca pearls, coconut, and nuts for the ultimate make-ahead treat.
Prepare the peach gelatin according to the package directions, using ¼ less water than called for (see notes). Refrigerate until firm, then cut into small cubes.
If using tapioca pearls, cook them according to the package directions and let them cool completely.
In a large bowl, stir together the Mexican crema, condensed milk, evaporated milk, vanilla, and a little peach syrup. Add more syrup to taste if you like it sweeter or thinner.
Add the peaches cut into bite-sized pieces, the gelatin cubes, and the cooked tapioca pearls.
Add the shredded coconut, raisins, and chopped nuts. Gently stir everything together until well combined.
Cover and refrigerate for at least 3 hours before serving.
Serve cold, either in a large bowl for sharing or in individual dessert cups.
Notes
Prepare the gelatin with about ¼ less water than the package directions call for. This makes it a little firmer, so the cubes hold their shape better once mixed into the creamy dessert.
For best results, prepare the gelatin and tapioca pearls the day before so they have plenty of time to cool and set.
Start with a little peach syrup and add more to taste.
Fresh peaches are a wonderful substitute when they're in season.
Store leftovers covered in the refrigerator for up to 3 days. Give the dessert a gentle stir before serving again.
