Cut all the fruit, including the bananas, into small bite-sized pieces.
Place the diced fruit in a large bowl. Gently toss to combine.
In a separate bowl, whisk together the yogurt, Mexican crema, sweetened condensed milk, and vanilla extract until smooth and creamy.
Taste and add a little more condensed milk if you'd like a sweeter cream.
Divide the fruit among 8 serving bowls or cups.
Spoon the cream mixture evenly over the fruit.
Top with granola, chopped nuts, and shredded coconut.
Serve immediately and enjoy while the fruit is fresh and the toppings are still crunchy.
Notes
You can use any seasonal fruit you like.
For the best texture, cut the fruit into small, even bite-sized pieces so every spoonful has a mix of everything.
The cream can be adjusted to your taste. If you prefer a lighter version, use a bit more yogurt and less condensed milk.
These are best served immediately after assembling so the fruit stays fresh and the granola stays crunchy.
If you want to make them ahead, prepare everything separately: cut the fruit, mix the cream, and store them in the fridge in airtight containers. Assemble just before serving.
Leftovers can be stored in the fridge for up to 1 day, but the granola will soften, so I usually add it right before eating.
