A delicious and simple arugula salad with apples, perfect to have it as a quick lunch or as a light and healthy dinner. The sour and sweet vinaigrette is a nice touch for this salad and it can made in so little time.

(125 gr) bag of arugula

(200 gr) apple
(cored and sliced)

(150 gr) Celery
(diced)

(80 gr ) Feta cheese
(crumbled)

(50 gr) Pecans
(chopped)

(80 gr) homemade croutons
(or use store bought)
For the Vinaigrette

(30 gr) extra virgin olive oil

lemon juice

orange juice

vinegar

honey

ground pepper

Instructions
Prepare dressing in a mason jar by adding all ingredients, closing the lid and shaking vigorously until combined. Taste and adjust flavor as needed.
In a large bowl place the arugula, apples and celery. Add croutons, pecans and then Feta cheese.
Pour the dressing and toss to combine. Serve immediately.
Notes
Serve 4 as a side dish or 2 as a generous lunch/dinner.
