White Pozole (Pozole Blanco) is a traditional Mexican dish, brimming with flavor from hominy, pork, and spices, minus the spiciness.

Step 1: Soak corn in water overnight, then wash and remove brown "heads" (optional).

Step 2: Place corn in a pot, cover with 2 inches of water, and simmer for about 3 hours.

Step 3: Blend onions, garlic, cumin, pepper, bay leaves, and oregano with 2 cups of water (or chicken stock). Strain and set aside.

Step 4: Wash and add meat to the pot, pour in the spice mixture, and add water to cover. Simmer for 2-3 hours until tender. Adjust salt.

Step 5: Remove meat, shred or cut, and place in a container. Serve pozole in bowls with broth, topped with shredded meat, onion, lettuce, radishes, hot sauce, and lime. Enjoy!
