Step 1: Wash the meat and rinds, pat them dry, and cut into large chunks.
Step 2: Heat lard in a pot, add meat, orange peel, bay leaves, and garlic. Mix and cook for 20 minutes.
Step 3: Dissolve salt in water, then add it to the pot. Continue cooking for another 30 minutes.
Step 4: Add pork rinds and a mixture of piloncillo (or brown sugar) and orange juice.
Step 5: Strain excess fat, chop or shred the meat, and serve with tortillas, salsa, lime wedges, and pickled chilies. Enjoy!
