Step 1: Create adobo sauce by blending soaked chiles, spices, vinegar, and salted water.
Step 2: Boil ribs in salted water till tender; strain, reserving cooking water.
Step 3: Brown ribs in lard, add adobo sauce, flavor for 2 mins.
Step 4: Add cooking water, boil, reduce sauce to gravy consistency.
Step 5: Serve with warm tortillas, red rice, and pickled onions. Enjoy Adobo de Puerco!
