Step 1: Add garlic, cilantro, chipotle peppers, onion, and tomatoes to a blender with 2 cups water.
Step 2: Blend for 1-2 minutes or until nicely pureed. You can strain the sauce or use it as it is.
Step 3: Heat oil in a pan and fry pasta until nicely golden. Remove from pan and set aside.
Step 4: Add ground beef to the pan and season with salt, pepper, and cumin. Cook until browned.
Step 5: Add mixed vegetables and cook 1 minute, then pour in the tomato sauce.
Step 6: Return fried coditos pasta to the pan, add 6 cups of chicken stock, and simmer everything for 10-12 minutes.
