Step 1: Cook chicken with, onion, carrots, leek, garlic, bay leaf, and salt until tender. Shred it and set aside.
Step 2: Make the sauce with tomatoes, guajillo chilies, spices, and chipotle in adobo peppers.
Step 3: Sautée sliced onions until tender and translucent.
Step 4: Add shredded chicken and chipotle chili sauce. Mix well.
Step 5: Cook for 20 minutes stirring from time to time.
