Chicken tinga or tinga de pollo is a Mexican budget-friendly and super flavorful recipe. It is perfect to serve on tostadas, make tacos, or sandwiches.  And it has a smoky and slightly spicy taste.

Step 1: Cook chicken with, onion, carrots, leek, garlic, bay leaf, and salt until tender. Shred it and set aside.

Step 2: Make the sauce with tomatoes, guajillo chilies, spices, and chipotle in adobo peppers.

Step 3: Sautée sliced onions until tender and translucent.

Step 4: Add shredded chicken and chipotle chili sauce. Mix well.

"

Step 5: Cook for 20 minutes stirring from time to time.
