Enchiladas rojas recipe uses red chilies as the main ingredient for making the sauce.  Rojo means red in english.

Once soaked, chiles are blended with spices to make a scrumptious sauce to dip the tortillas in.

You will need also chicken thighs, drumsticks, or breasts cooked and shredded.

For toppings: - Potatoes and carrots -Lettuce -Onion -Cream -Cheese

Step 1

Dip. Start by dipping a corn tortilla into the guajillo chile sauce. *Corn tortillas are better to make authentic enchiladas rojas!

Fry. The coated tortilla in plenty of oil making sure to not overdo or you won't be able to fold them.

Stuffing. Place the enchilada tortilla on a plate and place some chicken in the middle.

Fold... or roll the tortilla and place on a serving plate. Keep doing enchiladas rojas until all ingredients are gone.
