Buñuelos de Viento are rosette-shaped fritters very popular in Mexico during Christmas season. They are made of a light batter which is fried until crispy, then coated with cinnamon and sugar.

Step 1: Combine flour with eggs, water, melted butter, vanilla, and milk. Until a smooth runny batter forms.

Step 2: Heat 1-inch oil and first heat up the rosette mold for a couple of minutes. ...shake it to remove excess oil.

Step 3: And then sip it into the batter, making sure it doesn't cover on top.

Step 4: Place in the hot oil and gently shake it to remove the fried batter from the mold.

Step 5: Fry on both sides until nicely golden brow. Repeat until all batter is used.

Step 6: Coat with a mixture of sugar and ground cinnamon. Or you can also dust with confectioner's sugar.
