Step 1: Clean and soak chilies in hot water for 10 minutes.
Step 2: Blend them with water, vinegar, and spices until you'll have a paste.
Step 3: Combine meat with chili paste then place it in a strainer over a bowl and allow to rest overnight in the fridge.
Step 4: Assemble chorizo sausages using cling film or divide the seasoned meat into small ziplock bags.
Step 5: Chorizo is ready to be cooked or to store in the fridge for up to 1 week, or in the freezer for up to 3 months.
