"

Step 1: Add roasted poblano peppers, garlic, onion, cilantro, and 1 cup of vegetable stock in a blender .

"

Step 2: Blend for 1-2 minutes or until nicely pureed.

"

Step 3: Heat oil in a pan and toast rice until slightly golden. Rice need to be rinsed and drained before toasting.

"

Step 4: Add green salsa and corn kernels. Mix to blend the flavors.

"

Step 5: Cover the pan and allow to cook the green rice for 15-17 minutes.
