The Step by Step Recipe

Preheat the oven to 375°F (190°C) and grease a baking dish with olive oil. In a small bowl mix together paprika, cumin, oregano, chili powder, garlic, salt and pepper. Reserve 1/2 tablespoon of the mixture.

Place chicken breast on a large plate and sprinkle with the spices. Add 1 tablespoon of oil and massage the meat to coat it evenly. Arrange the chicken into the baking dish.

Add on top of the chicken breast, onions and bell peppers, sprinkle with the tablespoon of spice mixture you reserved before and drizzle with olive oil. Mix carefully.

Bake uncovered for about 30 minutes or until chicken has cooked through. Remove the dish from the oven and turn on the broiler.

Add the cheese on top of the dish and return to the oven. Broil until the cheese is bubbly and just beginning to toast (about 5 minutes).
