Agua de limón con chía is a popular Mexican agua fresca made with chia seeds, lime juice, water, and a touch of sweetener. The hydrated seeds float throughout the drink, giving it a fun texture that makes every sip a little different.
I still remember my grandpa Gabino picking me up from school and buying me a large cold glass of agua de chía at the paletería on the way home.
Today I make it at home all the time! It’s easy, refreshing, and much more affordable than store-bought drinks.

How To Make Agua De Limón Con Chía
Juice some of the limes into a cup. I like to start with less and adjust later according to taste.
Place a strainer over a pitcher and pour in the lime juice.
If you don’t mind a few pulp bits, you can squeeze the limes directly into the pitcher and save yourself another dish to wash.
Add the water to the pitcher and then the sweetener you prefer, I like to use agave syrup, but feel free to use any type of sweetener you prefer.
Slowly sprinkle in the chia seeds while whisking vigorously.
Continue stirring for about two minutes so the seeds begin to hydrate and don’t clump together.
Taste and adjust the flavors. Add more lime juice if you like it tangier or more sweetener if you prefer a sweeter drink.
Fill glasses with ice and garnish with lime slices or fresh mint if you like.
Pour in agua de limón con chía and enjoy!
I love serving this agua fresca as a refreshing treat any day of the week, but it also pairs really well with Mexican summer favorites like grilled corn salad or pollo asado tacos.
Recipe Notes
- Limes have a distinct tart and acidic flavor, this should be your first option, but in case you can’t find them, use regular yellow lemons.
- Room-temperature water helps the sweetener dissolve more easily. Still water works perfectly, but sparkling water adds a fun fizz.
- Add the chia seeds slowly while whisking vigorously. This way the seeds have the time to soak separately and won’t clump.
- I always add 1 tablespoon of chia seeds for every 5-6 cups of water. But of course, more can be added if you want to. Just don’t forget that chia seeds absorb water and create a gelatinous texture, so don’t add too many. We’re making an agua de chía here, not a pudding.
- Use any type of sweetener you prefer like granulated sugar, brown sugar, stevia, monk fruit, piloncillo, or miel de agave.
- If you prefer, chill the pitcher with the drink in the refrigerator for an hour or two before serving.
Keeping Leftovers Fresh
Agua de limón con chía is best enjoyed the same day, but it can be kept in the refrigerator for up to two days. After that, the lime juice starts losing its fresh flavor and may become slightly bitter.
Honestly, I usually make only what I plan to drink that day. This Mexican drink comes together so quickly that there’s really no need to make it far in advance.

Ingredients
- 4 limes
- 1 Tablespoon chia seeds
- 6 cups water (room temperature)
- 4 Tablespoons brown sugar (or ¼ cup agave syrup)
For serving
