Easy Brochetas de Camarón that are perfect for the summertime. These Mexican shrimp kabobs are easy to make and so flavorful! Enjoy drizzled with your favorite salsa.

Ingredients

large shrimp
(peeled, deveined, and with tails on.)

1 ½
cups
fresh pineapple
(cut into 1 inch cubes)

onion
(cut into wedges)

olive oil

teaspoon
garlic powder
▢
1
teaspoon
chili powder
▢
¼
teaspoon
ground cumin
▢
limes
(for marinade & for serving)

salt & pepper
(to taste)
Instructions
Place all spices in a mixing bowl and add olive oil, salt, and pepper. Stir to create a marinade.
Add the peeled and deveined shrimp to the bowl and toss to coat them on all sides.
Cover the bowl and place in the refrigerator, allowing the shrimp to marinate for 15-20 minutes.
While the shrimp is marinating, start your grill and and prepare it for high heat.
Thread the shrimp, onion, and pineapple chunks into the skewers (read notes).
Squeeze some lime juice over the shrimp and then place the skewers on the preheated grill.
Cook for 2-3 minutes per side, or until the shrimp turn pink and are well cooked through.
Remove the skewers from the grill and transfer them to a serving platter.
Serve brochetas de camarón right away, accompanied by lime wedges for squeezing fresh lime juice over the shrimp if desired.
Notes
Do not add the lime juice to the marinade or the shrimp will cook with the acid, it is better to add it just right before cooking the shrimp.
If using wooden skewers, soak them in water for about 30 minutes before grilling. This prevents the skewers from burning while cooking on the grill.
