Pozole  Rojo

Step 1:  Soak the corn.  Leave to rest overnight.

Step 2:  Next day discard the soaking water and wash the corn with cold water. Remove the little "heads" of each corn kernel.

Step 3:  Place soaked and cleaned hominy in a large pot and cover with 2-inches (5cm) of water. Cook over medium heat for about 3 hours.

Step 4: Soak chilies Place guajillo chilies in a bowl and cover them with boiling water. Allow soaking for 20 minutes.

Step 5: Make the chili sauce Drain the chilies and place them in a blender along with onions, and spices.

Step 6: Make the chili sauce Pour one and a half cups of water and blend until you’ll get a smooth sauce. Strain the sauce into the pot.

Step 7: Continue pozole  preparation Add the pork meat and enough water to cover all the ingredients. Season with salt. Cook from 2 to 2 1/2 hours.
