Pavo Navideño

Turkeys are called pavo or guajolote in Mexico.  Pavo Navideño is a Mexican turkey recipe full of flavor,  juicy, and with a slightly smoky, and mildly spicy taste.

Step 1: Make the adobo sauce Make the adobo sauce with chilies and spices. Strain the sauce into a bowl.

Step 2:  Prepare the turkey Season turkey with salt and pepper on all sides and in the cavity.  Stuff with herbs, lemon, and orange wedges.

Step 3:  Roast the turkey Preheat oven to 390°F(200°C).  Cover the turkey breasts with foil and roast for 1 hour..

Step 4:  Keep roasting Until it reaches the optimal temperature and the skin is nicely crispy. .
