Mexican Sauteed Mushrooms "Champiñones"

Ingredients needed:

- 1.5 lb champignon mushrooms. - 3 medium tomatoes. - 1 medium onion.  - chili peppers. - parsley  - garlic clove  - extra virgin olive oil  - salt and pepper.

Step 1: Heat up the olive oil and sautée onion, chili peppers, and garlic.

Step 2: Add tomatoes, season with salt and pepper. Cook until soft.

Step 3: Mix in the mushrooms and cover the pan. Set the heat over medium-low and cook for about 8 minutes, mixing from time to time.

Step 4: Uncover the pan and allow the mixture to cook for an extra minute. Adjust salt and pepper to taste.
