Step 1: Peel and slice carrots into uniform pieces.
Step 2: Heat oil, sauté garlic, carrots, onions, peppercorns, and chilies for 2 mins.
Step 3: Pour in vinegar, water; add salt, bay leaves, and oregano. Simmer for 4-5 mins.
Step 4: Let it cool, then transfer to sterilized jars with brine. Enjoy!
