Step 1: Mix milk, yeast, sugar, and flour for a runny mixture. Let rest until foamy. 

Step 2: Combine remaining flour, sugar, preferment, egg, nata, vanilla, butter, and salt in mixer. 

Step 3: Knead into smooth dough, proof until doubled  (1-3 hrs). 

Step 4: Roll dough, cut rounds, proof 30 mins. 

Step 5: Cook gorditas on comal until crispy. Serve warm. Enjoy Gorditas de Nata!
