Step 1: Heat up oil in a pan and cook the turkey meat then season with salt and pepper.
Step 2: Add diced bell peppers and sauté until it softens. Add the diced onions and cook.
Step 3: Add the diced tomatoes, minced garlic, cumin, paprika, and 1 cup of water or chicken stock. Cook for 10 minutes.
Step 4: Heat a flat skillet and put a tortilla. Add cheese and some of the ground turkey mixture and fold the tortilla.
Step 5: Cook for 1 minute on one side then flip it and cook for another minute. Repeat for the remaining mixture.
