Step 1: Make the sauce with tomatoes, guajillo & chipotle chiles, onion, garlic, and pepper. Blend and strain.
Step 2: Sautee the vegetables with a bit of oil.
Step 3: Add cilantro and oregano for a hearty touch. Season to taste.
