Step 1: Preheat oven to 200°C (390°F ).Peel and cut potatoes into bite-sized chunks.
Step 2: Boil potatoes in salted water for 3-4 mins.
Step 3: Drain and place on a tray. Add herbs, garlic, pepper, and olive oil. Toss to coat.
Step 4: Roast for 20 mins, flip with spatula, then roast for another 15-20 mins until golden and crisp.
Step 5: Sprinkle with salt and serve.
