Step 1: Whisk fresh herbs, eggs, salt, and pepper, then cook in a covered, oiled non-stick pan for 3-4 minutes on each side. Set the frittata aside.
Step 2: Cook spinach in salted water, drain, squeeze out liquid, chop roughly, and set aside.
Step 3: Season and roll the meat with frittata, ham, and spinach.
Step 4: Tie with twine and brown in a pan with vegetables. Add wine, stock, and simmer for 2 hours.
Step 5: Cool, slice, and serve with the cooking sauce.
