Step 1: Blend guajillo chilies, chipotle peppers, achiote paste, garlic, spices, orange juice, vinegar, and water to create adobo sauce.
Step 2: Season turkey, spread melted butter and adobo mix under the skin, and stuff with lemon, garlic, orange, and herbs.
Step 3: Preheat oven to 390°F (200°C), roast turkey on a rack with stock for 1 hour. Brush with sauce, cover, and roast until internal temperature is 165°F (75°C).
Step 4: Achieve a crispy skin, tent with foil, rest for 30 minutes, then serve.
