Season chicken with chipotle powder, salt, pepper, and cumin.
Heat the oil in a cast iron skillet and cook the chicken for 8-10 minutes or until browned and cooked through.
Remove chicken from the skillet and place in a cutting board. Chop it and cover with foil until needed.
Assemble the Doritos nachos
Preheat your oven to 350°F (175°C).
Place half of the Doritos in a single layer in a baking sheet and then add a layer with half of the chopped chipotle chicken.
Add cheese on top and then make another layer with the remaining Doritos, chicken and more cheese on top. Pop in the oven until cheese is melted (about 4-5 minutes).
Top the Doritos Nachos with the pico de gallo salsa, drizzle with cream, and add crumbled queso fresco on top. Serve immediately.
