Place the old fashioned oats in a blender and pour in half of the milk. Blend until creamy. No worries if it not totally blended, some bites here and there adds a nice texture to atole.
In a medium pot pour the water, add the sugar and cinnamon stick. Bring to a boil, then lower the heat to low, cover and let it simmer for about 5 minutes.
Add the oats mixture, then the remaining milk and bring to a boil.
Lower the heat and let it simmer, stirring constantly, until atole reaches a thick consistency (about 10 minutes).
If oatmeal atole has thickened so much and you’d like a more liquid consistency, add more milk, taste for sugar and let simmer for another half a minute. Turn off the stove and serve.
NOTES
MAKE IT VEGAN/DAIRY FREEYou can make this drink vegan or dairy free by using vegan beverages such as coconut milk, almond milk, soy milk, etc. If you doing this, I recommend using 1/4 cup more of oats since you’ll be missing a bit the creaminess from whole milk.HOW TO STOREMi grandma used to make oatmeal atole enough to have it for breakfast and merienda(late afternoon snack), so she will just place the leftovers into a container with lid and store it in the refrigerator for later.You can reheat the drink in a sauce pan over medium heat, or just serve it in mugs and use the microwave.
