Huevos con chorizo is a Mexican traditional breakfast made with chorizo and eggs scrambled and served with various side dishes and coffee. This super simple recipe can be made in just 15 minutes!
Add chorizo and cook for about 7 minutes crumbling it with a wooden spoon until has cooked through and is lightly crispy.
While the chorizo is cooking, crack the eggs into a bowl, season with salt and pepper then whisk to combine.
Pour eggs into the pan with the chorizo and stir to combine.
Cook until eggs are set to your liking.
Notes
If you use store-bought chorizo you will need to remove the casings before cooking the sausage.
If the chorizo you use has too much fat, you can drain the excess before adding the eggs.
Chorizo will be done when you notice the texture has changed and become a little dry and crisp, just as minced meat after frying. It will also change color and become a little bit dark.
You can also crack eggs directly into the pan.
Go easy with seasonings as chorizo has already salt and other spices.
The cooking time of eggs will depend on personal preferences. I like my scrambled eggs to be fully cooked, but many people like them moist. As far as chorizo is nicely cooked, you can adjust the doneness in eggs to your liking.
