Sopa de Conchas

Made with shell pasta, known in Spanish as conchas or conchitas.

And with tasty, healthy, and delicious vegetables!

Step 1

Make the "recaudo" by blending together fresh tomatoes, onions, and garlic.

Step 2

Fry "conchitas" pasta in a medium stockpot. Then drain the excess of oil using a wire colander.

...don't forget to drain the oil!

step 3

Add first the tomato sauce, vegetables and cilantro or epazote. Pour chicken stock and bring to a boil.

step 4

Add fried pasta and cook everything until tender. It takes only  from 8 to 10 minutes! Adjust salt to taste...

Serve with a squeeze of lime...yum!
