Carne en su Jugo means “meat in its own juice”, referring to the method the beef is cooked. This hearty recipe is flavorful, easy to make, and perfect to serve any day of the week.

First, make the sauce: Boil tomatillos and chilies, then blend them with cilantro, onion, garlic, and cumin.

Step 1

Cook the bacon. Heat 1 tablespoon of your favorite oil on a braising pan. Add bacon and cook, while stirring, until nicely crisp.

Cook the meat. Season the beef with salt, pepper, and cumin powder. Add to the pan and cook until its juices release.

Combine and Cook. Add the tomatillo salsa to the pot, then pour hot water or beef stock until covered by 2-inches. Cook for 30 minutes.

Serve. With onions, cilantro, radishes, and a squeeze of lime. Enjoy with warm tortillas!
