Las tiernas hojas se cuecen primero en agua por un corto tiempo ya que esto ayuda a quitarles un poco lo amargo.<\/p>\n\n\n\n<p>Luego se saltea en un buen aceite de oliva junto con mucho ajo y <em>peperoncino<\/em> (chile) \u00a1No les digo lo buena que es! Con el aceitito que se ha aromatizado y tomato todo el sabor de la achicoria.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"781\" height=\"1024\" comerla<\/h2>\n\n\n\n<p>Si bien la achicoria se sirve principalmente como acompa\u00f1amiento de platillos de carne y pescado, la verdad es que tambi\u00e9n se acostumbra comerla en otros modos, por ejemplo en la pizza, en pan tostado (bruschetta), para rellenar un pan o focaccia como un sandwich, con pasta y hasta en frittata (tipo tortilla espa\u00f1ola).<\/p>\n\n\n\n<p>Uno de mis almuerzos favoritos cuando estamos todo el d\u00eda en la calle es pasar a una <em><strong>tavola calda<\/strong><\/em> (son tipo fonditas) y pedir un pedazo de <em>focaccia<\/em> con <em>mortadella<\/em> y achicoria&#8230;\u00a1Se me hace agua la boca solo de escribirlo!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">S\u00edrvela con<\/h2>\n\n\n\n<div class=\"wp-block-columns is-layout-flex receta.<\/em><\/p>\n\n\n\n<p><strong>ACHICORIA<\/strong>: Recuerden que se reduce mucho una vez cocinada, as\u00ed que traten de comprar un buen mazo grande.<\/p>\n\n\n\n<p><strong>ACEITE<\/strong>: Extra virgen de oliva es lo mejor para este tipo de recetas porque su sabor es inconfundible en la comida mediterr\u00e1nea. Pero si lo desean pueden usar el aceite que prefieran.<\/p>\n\n\n\n<p><strong>AJO<\/strong>: Depende mucho del gusto de cada persona, yo lo agrego picado pero hay quien no le gusta de esa manera y agrega el diente completo sin pelar, solo ligeramente aplastado para que suelte su aroma y sabor al fre\u00edrse. grande a fuego medio, agregar el ajo y sofre\u00edr por unos segundos para que suelte el aroma y el sabor.<\/p>\n\n\n\n<p>Incorporar el chile y sofre\u00edr r\u00e1pidamente para que no se queme, si han agregado chile fresco es mejor sofre\u00edrlo antes del ajo.<\/p>\n\n\n\n<p>Unir la achicoria y saltear mezclando muy bien para permitir que la verdura se impregne del todos los
