Una sopa calentita y confortante con la receta tradicional de Sonora. Prepara esta deliciosa sopa de papa para servir como una comida completa en cualquier d\u00eda de la semana.<\/p>\n\n\n\n<p>Si bien yo crec\u00ed lejos de la regi\u00f3n norte\u00f1a en M\u00e9xico, mi abuela Julia hac\u00eda una sopa muy parecida a esta cuando yo era ni\u00f1a. Ella la serv\u00eda casi siempre para desayunar, super caliente y con una cucharada de jocoque en lugar de ponerle leche a la sopa cuando la cocinaba.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"683\" height=\"1024\" data-pin-nopin=\"nopin\" data-pin-url=\"https:\/\/www.maricruzavalos.com\/es\/caldo-de-papa-y-queso\/?tp_image_id=30404\" src=\"https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/09\/caldo_de_papa-683x1024.jpg\" alt=\"\" class=\"wp-image-30404\" srcset=\"https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/09\/caldo_de_papa-683x1024.jpg 683w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/09\/caldo_de_papa-200x300.jpg 200w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/09\/caldo_de_papa-768x1152.jpg 768w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/09\/caldo_de_papa-1024x1536.jpg 1024w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/09\/caldo_de_papa.jpg 1200w\" sizes=\"(max-width: 683px) 100vw, 683px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">\u00bfQu\u00e9 es el caldo de papa y queso?<\/h2>\n\n\n\n<p>El caldo de papa y queso, tambi\u00e9n conocido como <strong>sopa de queso<\/strong>, <strong>caldo de queso y papa sonorense<\/strong>, etc, es un platillo muy difundido y apreciado al norte de la R\u00e9publica Mexicana y con or\u00edgenes en el estado de Sonora.<\/p>\n\n\n\n<p>Una deliciosa y confortante sopa preparada con papas, queso de rancho y chiles verdes norte\u00f1os (Anaheim, California), todo ello en un riqu\u00edsimo caldillo ligero de tomate y cebolla aromatizado con ajo, or\u00e9gano y cilantro al cual se le agrega un chorrito de leche para darle un sabor muy especial.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Que tipo de queso usar<\/h2>\n\n\n\n<p>El queso tradicional para el caldo de papa es el \u201cde rancho sonorense\u201d, aunque como sabemos, no es posible encontrarlo fuera del Estado. Entonces, un <a href=\"https:\/\/www.maricruzavalos.com\/es\/queso-fresco\/\" class=\"rank-math-link\">queso fresco<\/a> casero o del que encuentren donde vivan es tambi\u00e9n una buena opci\u00f3n.<\/p>\n\n\n\n<p><em>Receta Relacionada<\/em>: <a href=\"https:\/\/www.maricruzavalos.com\/es\/queso-fresco\/\" class=\"rank-math-link\">Como hacer Queso Fresco en casa<\/a><\/p>\n\n\n\n<p>No recomiendo de usar quesos con mucha grasa como el Gouda, Fontina, etc. Porque se derriten completamente y la idea es que el queso se ablande un poco pero no que pierda su forma completamente o se desintegre.<\/p>\n\n\n\n<p>En la receta de caldo con papas el queso es lo \u00faltimo que se agrega y se hace cuando ya las papas est\u00e1n cocidas y se apaga la estufa, as\u00ed con el calor del caldo el queso se suaviza ligeramente.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"683\" height=\"1024\" data-pin-nopin=\"nopin\" data-pin-url=\"https:\/\/www.maricruzavalos.com\/es\/caldo-de-papa-y-queso\/?tp_image_id=30407\" src=\"https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/09\/caldo_de_papa_y_queso-683x1024.jpg\" alt=\"\" class=\"wp-image-30407\" srcset=\"https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/09\/caldo_de_papa_y_queso-683x1024.jpg 683w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/09\/caldo_de_papa_y_queso-200x300.jpg 200w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/09\/caldo_de_papa_y_queso-768x1152.jpg 768w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/09\/caldo_de_papa_y_queso-1024x1536.jpg 1024w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/09\/caldo_de_papa_y_queso.jpg 1200w\" sizes=\"(max-width: 683px) 100vw, 683px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientes<\/h2>\n\n\n\n<p>*<em>Las cantidades est\u00e1n abajo en una lista.<\/em><\/p>\n\n\n\n<p><strong>QUESO<\/strong> &#8211; En esta receta yo he usado queso <strong>primo sale<\/strong>, un tipo de queso italiano muy parecido al panela mexicano y que no obstante el nombre, tiene muy poca sal.<\/p>\n\n\n\n<p><strong>PAPAS<\/strong> &#8211; Cortadas en cubos. De preferencia del mismo tama\u00f1o para que se cuezan uniformemente.<\/p>\n\n\n\n<p><strong>CHILES<\/strong> &#8211; El chile que se usa tradicionalmente es el llamado <a aria-label=\"Anaheim (opens in a new tab)\" rel=\"noreferrer noopener\" class=\"rank-math-link\" href=\"https:\/\/www.gourmetsleuth.com\/ingredients\/detail\/anaheim-chile\" target=\"_blank\">Anaheim<\/a> o California es un tipo de chile muy popular y f\u00e1cil de encontrar en los estados del norte del pa\u00eds. Pueden substituirlo con cualquier chile verde, de preferencia que puedan asar y quitarle las venas y semillas. Yo he usado friggitelli, un tipo de chile que se conoce en otras partes del mundo como <strong>pimientos verdes italianos<\/strong>.<\/p>\n\n\n\n<p><strong>TOMATES<\/strong> &#8211; Picados en cubitos peque\u00f1os o tambi\u00e9n pueden molerlos en la licuadora. Lo importante es que no pongan demasiados ya que no queremos que prevalezca su sabor sobre el de las papas.<\/p>\n\n\n\n<p><strong>CEBOLLA<\/strong> &#8211; Finamente picada o cortada en tiras, mi recomendaci\u00f3n es que la cocinen lentamente a fuego bajo o tambi\u00e9n la pueden moler junto con el tomate.<\/p>\n\n\n\n<p><strong>CALDO<\/strong> &#8211; Puede ser de pollo o de verduras para darle un poco de sabor al caldo de papa. En M\u00e9xico es muy com\u00fan usar caldo de pollo en cubos o en polvo. Tambi\u00e9n pueden usar agua caliente ya que la sopa en realidad tiene mucho sabor gracias a los condimentos que se le agregan.<\/p>\n\n\n\n<p><strong>LECHE<\/strong> &#8211; En la receta tradicional sonorense de caldo de papa se agrega un chorrito de leche para darle un ligero toque cremoso. Si no lo quieren agregar no importan, el platillo queda riqu\u00edsimo de todas maneras.<\/p>\n\n\n\n<p><strong>CONDIMENTOS<\/strong> &#8211; Ajo, or\u00e9gano, cilantro sal y pimienta. Ponerlos en una bolsa o contenedor de pl\u00e1stico y luego envolverlos en un trapo de cocina. Dejar reposar por 10-15 minutos.<\/p>\n\n\n\n<p>Quitarles la piel a los chiles, abrirlos por la mitad, sacarles todas las semillas y quitarles las venas. Cortarlos en tiras&nbsp;y reservar.<\/p>\n\n\n\n<p>En una cazuela calentar el aceite a fuego medio. Agregar la cebolla y saltearla por 4 minutos a fuego bajo hasta que est\u00e9 transparente y tierna.<\/p>\n\n\n\n<p>Unir el ajo y saltear por un minuto para que suelte su aroma, mezclando siempre para que no se queme.<\/p>\n\n\n\n<p>Agregar el tomate y cocinar moviendo de vez en cuando por alrededor de 5 minutos o hasta que el tomate haya soltado sus jugos y tengamos una salsa espesa.<\/p>\n\n\n\n<p>Ba\u00f1ar con el caldo, agregar el cilantro y sazonar con sal y pimienta (LEER NOTAS). Subir la flama y llevar a hervor. Dejar cocinar por 1 minuto.<\/p>\n\n\n\n<p>Incorporar las papas y tapar la cazuela. Dejar cocinar hasta que las papas est\u00e9n tiernas (unos 25 minutos). <\/p>\n\n\n\n<p>Destapar la cazuela y agregar las rajas de chiles y la leche. Mezclar cuidadosamente y dejar que tome sabor la sopa de papa por 2 minutos.<\/p>\n\n\n\n<p>Apagar la estufa e inmediatamente unir el queso. Mezclar y dejar reposar 5 minutos antes de servir acompa\u00f1ado de <a href=\"https:\/\/www.maricruzavalos.com\/es\/tortillas-de-harina-con-masa-madre\/\" class=\"rank-math-link\">tortillas calientitas de harina<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Notas y consejos<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Cuando sazonen el caldo de papa tomen en cuenta el tipo de queso que agregar\u00e1n.
