Cubrirlos con agua hirviendo y dejarlos remojando por al menos 30 minutos o hasta que el agua se haya casi enfriado.<\/p>\n<p>En una licuadora poner los chiles, todas las especias, agregar una cucharadita de sal, el vinagre y media taza del agua donde se remojaron los chiles. Si desean pueden utilizar especias en polvo, por ejemplo el comino, la pimienta, el laurel, etc. Solo recuerden que las cantidades son ligeramente mayores cuando las especies son en polvo.<\/p>\n<p>Licuar hasta obtener una salsa espesa y aterciopelada. Dependiendo de la potencia de su licuadora esto puede llevar unos 3-4 minutos. Si desean la salsa con una consistencia r\u00fastica pueden licuar solo un par de minutos, si por el contrario quieren una salsa completamente amalgamada y de consistencia suave a la vista pueden licuar por m\u00e1s minutos y enseguida pasar la salsa por un colador. Reservar.<\/p>\n<p>Poner la carne en una cazuela grande, agregar agua y un poco de sal, llevar a ebullici\u00f3n y tapar la cazuela, dejar cocinando a flama media por unos 30-40 minutos o hasta que la carne est\u00e9 perfectamente tierna. Sacar las costillas y acomodarlas en un plato, colar el caldo y reservar.<\/p>\n<p>En la misma cazuela poner la manteca a calentar, agregar las costillas y sofre\u00edr hasta que adquieran un color ligeramente dorado. Agregar la salsa que prepararon precedentemente y mezclar, dejar que tome sabor por dos minutos. Unir un poco del caldo donde cocinaron las costillas y llevar a ebullici\u00f3n. Dejar cocinando con la cazuela destapada y a flama media alta hasta que la salsa se reduzca un poco y adquiera una consistencia densa.
