As\u00ed pues, descubr\u00ed que lo de la textura se debe a que est\u00e1 preparado con&nbsp;una t\u00e9cnica llamada <strong>Tangzhong<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">M\u00e9todo Tangzhong<\/h2>\n\n\n\n<p>El m\u00e9todo Tangzhong es una mezcla de 1 parte de harina por 5 de agua para preparar una masa gelatinosa (parecida al <a href=\"https:\/\/es.wikipedia.org\/wiki\/Roux\" target=\"_blank\" rel=\"noopener\">roux<\/a>) que una vez reposada y a temperatura ambiente se integrar\u00e1 a la masa para el pan. <\/p>\n\n\n\n<p>Si bien dicha t\u00e9cnica se usa principalmente para preparar pan de leche, tambi\u00e9n se puede usar para hacer otros tipos de pan, salados y dulces por igual.<\/p>\n\n\n\n<p>El porque del nombre chino de la t\u00e9cnica y no uno japon\u00e9s (como ser\u00eda lo correcto) es porque no fue sino hasta por ah\u00ed del 2007 cuando<span class=\"Apple-converted-space\">&nbsp;<\/span>Yvonne Chen, en su libro de cocina \u201cThe 65\u00b0C Bread Doctor\u201d muestra este m\u00e9todo para preparar pan, haci\u00e9ndose tan popular (no solo en China sino en muchos pa\u00edses asi\u00e1ticos) que en muchas partes se le conoce como \u201cbollos chinos\u201d o \u201cchinese rolls\u201d. <\/p>\n\n\n\n<p>En realidad este m\u00e9todo era ya muy usado en Jap\u00f3n, para ser precisos en Hokkaido, de ah\u00ed el nombre de esta receta en particular.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">La receta de pan japon\u00e9s de leche<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">notas<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Pueden usar harina normal de pasteler\u00eda, pero recuerden que absorbe menos los l\u00edquidos por lo que les recomiendo le pongan aproximadamente el 20% en menos de leche.<\/li><li>El huevo para barnizar pueden sustraerlo del total, cuando lo batan quiten unas dos cucharaditas del mismo y las mezclan con una cucharadita de leche o crema, en realidad se necesita muy poco para barnizar los panes.<\/li><li>Pueden preparar el Tangzhong el mismo d\u00eda, pero es necesario darle un poco de reposo despu\u00e9s de haberse enfriado. Bastar\u00e1n dos o tres horas a temperatura ambiente.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Preparaci\u00f3n del Tangzhong para el pan japon\u00e9s:<\/h2>\n\n\n\n<p>Por la noche antes de irse a dormir, en una sart\u00e9n antihaderente ponemos el agua y la harina, mezclamos bien hasta que se hayan integrado estos dos ingredientes y no haya un solo grumo. Dejamos enfr\u00edar y ponemos a reposar en el refrigerador toda la noche (ver notas). A la ma\u00f1ana siguiente sacamos la masa y dejamos que alcance la temperatura ambiente.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Preparaci\u00f3n del pan<\/h3>\n\n\n\n<p>Poner en una superficie (o en el cuenco de una amasadora el\u00e9ctrica) la harina, el az\u00facar y la levadura. Mezclar. Agregar la leche, &nbsp;el huevo ligeramente batido (ver notas) y la masa Tangzhong, comenzar a amasar poco a poco hasta integrar los ingredientes. <\/p>\n\n\n\n<p>Agregar la sal y la mantequilla y amasar hasta que todo haya absorbido perfectamente y tengamos una masa el\u00e1stica y suave, que se queda pegada ligeramente a los dedos pero que es igualmente manejable, esto se llevar\u00e1 un poco de tiempo si han decidido amasar a mano, en la planetaria con 15 minutos de amasado es suficiente. caja (si no es antihaderente deber\u00e1n engrasarlo un poco con mantequilla), es importante que sea lo bastante profundo para que la masa crezca tres veces su tama\u00f1o, si usan moldes con los bordes m\u00e1s bajos la masa puede salirse durante la siguiente fermentaci\u00f3n arruinando el formato del pan.
