Es un plato muy popular en M\u00e9xico y se consume en diversas regiones del pa\u00eds en fechas especiales como el 15 de Septiembre para D\u00eda de la Independencia, en Navidad, cumplea\u00f1os y otras festividades.<\/p>\n\n\n\n<p>El color rojo del caldo se debe a los chiles secos que se utilizan en su preparaci\u00f3n, como el chile guajillo, el chile ancho y el chile pasilla, entre otros. El pozole suele contener carne, generalmente cerdo, aunque tambi\u00e9n puede prepararse con pollo o incluso vegetariano. <\/p>\n\n\n\n<p>Existen varios tipos de pozole que dependen de la regi\u00f3n en M\u00e9xico. Tambi\u00e9n pueden agregar manitas de cerdo y cuerito.<\/li>\n\n\n\n<li><strong>Ma\u00edz<\/strong>: El ma\u00edz cacahuazintle es el recomendado, si no encuentran pueden utilizar ma\u00edz mote peruano o substituir con ma\u00edz para pozole enlatado.<\/li>\n\n\n\n<li><strong>Chiles<\/strong>: Chiles guajillos y chiles anchos son los m\u00e1s recomendables.<\/li>\n\n\n\n<li><strong>Especias y aromas<\/strong>: Cebolla, ajo, comino, hojas de laurel, or\u00e9gano, sal y pimienta.<\/li>\n\n\n\n<li><strong>Para servir<\/strong>: Lechuga, cebolla, rabanitos, limones, salsa y tostadas.<\/li>\n<\/ul>\n\n\n\n<p class=\"has-background\" style=\"background-color:#f9ed8f\"><strong>Nota Importante<\/strong>: El ma\u00edz que he utilizado estaba ya pasado por el proceso de nixtamalizaci\u00f3n, es importante que controlen si el que ustedes compren est\u00e1 ya listo para cocinar, ya que si no ha sido nixtamalizado tendr\u00e1n que hacerlo ustedes con cal.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Como Hacer Pozole Rojo<\/h2>\n\n\n\n<p>Poner el ma\u00edz a remojar en una olla o cuenco con abundante agua la noche anterior. <\/p>\n\n\n\n<p>Al d\u00eda siguiente notar\u00e1n que el ma\u00edz se ha suavizado un poco. Esto se lleva un poco de tiempo porque se tiene que hacer grano por grano pero es necesario quitarlas. Poner un colador grande encima de la olla y agregar la salsa. Conforme la carne se est\u00e9 cocinando, con una cuchara quitar la espuma que se forma.<\/p>\n\n\n\n<p>Con la flama medio baja, dejar cocinar por alrededor de dos o tres horas o hasta que la carne y el ma\u00edz est\u00e9n tiern\u00edsimos. Solo recuerden de rectificar siempre la sal si agregan un poco m\u00e1s de agua.<\/p>\n\n\n\n<p>Servir el pozole en cuencos grandes poniendo un poco de la carne desmenuzada encima. Acompa\u00f1ar con lechuga, cebolla y rabanitos, luego servir con una exprimida de jugo de lim\u00f3n, salsa y tostadas.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Notas y Consejos<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Descabezar los granos de ma\u00edz es la parte m\u00e1s tediosa de esta preparaci\u00f3n. Yo normalmente lo hago mientras veo algo en la TV, se me pasa el tiempo volando y en menos de lo que pienso ya tengo el ma\u00edz limpio y listo.<\/li>\n\n\n\n<li>Si no quieren que el pozole pique un poco, pueden descartar las venas y las semillas de los chiles guajillo.<\/li>\n\n\n\n<li>Si no tienen una olla lo bastante grande pueden usar dos contempor\u00e1neamente.<\/li>\n\n\n\n<li>El pozole se puede congelar. Si han hecho mucho y les sobra, pueden ponerlo en contenedores y guardarlo en el congelador hasta por un par de meses.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Como Conservar y Recalentar<\/h2>\n\n\n\n<p>Ahora que ya saben como hacer pozole rojo, vamos a ver como conservarlo.<\/p>\n\n\n\n<p>Los sobrantes de pozole pueden durar hasta 4-5 d\u00edas en el refrigerador o hasta 3 meses en el congelador.<\/p>\n\n\n\n<p>Pueden guardar los granos con el caldo en un recipiente y la carne separadamente en otro.<\/p>\n\n\n\n<p>Para recalentar, si el pozole est\u00e1 congelado es recomendable descongelarlo a temperatura constante en el refrigerador.
