Como la extra\u00f1o a ella y sus platillos preparados con tanto cari\u00f1o y saz\u00f3n. <\/p>\n\n\n\n<p>En M\u00e9xico las alb\u00f3ndigas en caldo pueden tener mil variantes, esta que les traigo yo es exactamente como las preparaban en mi casa. A\u00f1os y a\u00f1os despu\u00e9s a\u00fan sigo recordando la receta como si la tuviera tatuada en la memoria. <\/p>\n\n\n\n<p>Una de esas cosas que haces ya por inercia de tantas veces que has repetido los mismos pasos. A decir verdad, mi mam\u00e1 Elvira no le pon\u00eda verduras al caldo pero mi madre si, as\u00ed que esta es la versi\u00f3n de ellas dos. Le encantaron la primera vez que las prob\u00f3 y le siguen gustando tanto que me las pide seguido. <\/p>\n\n\n\n<p>Fue una de las primeras recetas que puse en este blog y que decid\u00ed de borrar para poner una versi\u00f3n m\u00e1s actualizada y con fotos nuevas.<\/p>\n\n\n\n<p>En Italia las hago casi siempre en verano que es cuando hay much\u00edsima yerbabuena de la que se parece a la de M\u00e9xico. No me importa el calor, como mexicana que soy estoy acostumbrada a comer platillos calientes a\u00fan cuando el calor es insoportable.<\/p>\n\n\n\n<p>Este a\u00f1o mi yerbabuena ha empezado a reproducirse desde Enero, con lo loco que est\u00e1 el clima no es de sorprenderse, as\u00ed que no quise desaprovechar la oportunidad ahora que el clima sigue estando un poco fr\u00edo para preparar estas ricas alb\u00f3ndigas en caldo y acompa\u00f1arlas de <a rel=\"noopener noreferrer\" href=\"\/blog?p=5035\" target=\"_blank\">tortillas de ma\u00edz<\/a>.<\/p>\n\n\n\n<h2 en caldo Receta<\/h2>\n\n\n\n<p><em>Ingredientes (4 personas):<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>500 gr carne molida de cerdo<\/li><li>400 gr de jitomates frescos<\/li><li>100 gr de cebolla blanca<\/li><li>300 gr de cabalacitas<\/li><li>200 gr de zanahorias<\/li><li>50 gr de arroz<\/li><li>2 huevos<\/li><li>Aceite<\/li><li>1 diente de ajo<\/li><li>Yerbabuena<\/li><li>Or\u00e9gano<\/li><li>Sal y pimienta<\/li><\/ul>\n\n\n\n<p><em>Preparaci\u00f3n:<\/em><\/p>\n\n\n\n<p>En un contenedor poner la carne molida, el arroz lavado y escurrido, los huevos y un pu\u00f1ado de hojas de yerbabuena desmenuzadas con las manos. Agregar agua suficiente para caldo (unos 800-1000 ml).<\/p>\n\n\n\n<p>Salpimentar y llevar a ebullici\u00f3n. Mi mam\u00e1 Elvira agregaba un cubito de <em>Knorr Suiza<\/em> o si ten\u00eda caldo de pollo del d\u00eda anterior agregaba tambi\u00e9n ese. En mi casa las iban haciendo y agregando pero yo las hago todas antes. <strong>No mezclen inmediatamente<\/strong> ya que se corre el riesgo de deshacer las alb\u00f3ndigas. Agregarlas al caldo y dejar hervir hasta que las verduras est\u00e9n completamente tiernas, unos 15-20 minutos.<\/p>\n\n\n\n<p>Pueden tambi\u00e9n agregar otro tipo de verduras como ch\u00edcharos, col, papas, etc. Rectificar de sal, apagar la flama y agregar el or\u00e9gano desmenuzado con las manos. Mi mam\u00e1 Elvira agregaba un cubito de Knorr Suiza o si ten\u00eda caldo de pollo del d\u00eda anterior agregaba tambi\u00e9n ese. Ustedes si gustan pueden agregar caldo de pollo en cubito, polvo o en l\u00edquido (en lugar del agua).<\/div><\/li><li id=\"wprm-recipe-31296-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Cuando el caldo de jitomate comience a hervir, agregar las alb\u00f3ndigas delicadamente. En mi casa las iban haciendo y agregando pero yo las hago todas antes. No mezclen inmediatamente ya que se corre el riesgo de deshacer las alb\u00f3ndigas. Si quedan muy amontonadas, con una cuchara moverlas delicadamente hasta que est\u00e9n completamente cubiertas del caldo.<\/div><\/li><li id=\"wprm-recipe-31296-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Dejar hervir por 30 minutos a fuego bajo\/moderado, mientras mondar y cortar las calabacitas y zanahorias en el formato que prefieran (a cubitos, trozos, bastones).
