Tiene su origen en la tradici\u00f3n campestre cuando se utilizaba todo lo que quedaba del huerto para preparar sopas y estofados sin tener que desperdiciar nada, de hecho hoy en d\u00eda se dice que para que esta sopa sea lo m\u00e1s original posible es necesario que el <em>cavolo nero<\/em> (un tipo de kale) haya pasado al menos una helada.<\/p>\n\n\n\n<p>El nombre <strong>Ribollita<\/strong> no le podr\u00eda quedar m\u00e1s adecuado ya que significa \u201cre-hervida\u201d o hervida dos (o m\u00e1s) veces. Esta verdura es muy nutritiva llena de propiedades antioxidantes, vitamina C, carotenoides, \u00e1cido f\u00f3lico, fibra y Omega 3<\/p>\n\n\n\n<p>Su apariencia es la de una lechuga de hojas largas y de color obscuro, casi negro (de ah\u00ed el nombre) y su textura es densa y gruesa, casi como las hojas de una col. Su sabor es ligeramente amargo pero se suaviza considerablemente con la cocci\u00f3n.<\/p>\n\n\n\n<p>En Italia esta verdura es muy popular en invierno y se prepara de muchas maneras, desde cruda en ensaladas, al vapor, salteada para condimentar pasta, pizza y bruschetta, etc. Pero sin duda la reina de las recetas con el <em>cavolo nero<\/em> es esta que les traigo hoy: <strong>La sopa ribollita toscana<\/strong>.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"683\" data-pin-url=\"https:\/\/www.maricruzavalos.com\/es\/ribollita\/?tp_image_id=32469\" src=\"https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/11\/kale_cavolo_nero-1024x683.jpg\" alt=\"\" class=\"wp-image-32469\" srcset=\"https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/11\/kale_cavolo_nero-1024x683.jpg 1024w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/11\/kale_cavolo_nero-300x200.jpg 300w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/11\/kale_cavolo_nero-768x512.jpg 768w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2020\/11\/kale_cavolo_nero.jpg 1200w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Seg\u00fan la tradici\u00f3n toscana<\/h2>\n\n\n\n<p>Como \u00faltimas recomendaciones les puedo solo decir que seg\u00fan la tradici\u00f3n, para preparar esta la sopa ribollita se debe usar pan toscano (que pueden incluso hacer en casa), un buen aceite de oliva extravirgen (preferiblemente toscano, si pueden conseguirlo) y evitar a toda costa de agregar queso <em>parmigiano<\/em>. <\/p>\n\n\n\n<p>Claro que no siempre es posible hacer las recetas al 100% de como lo indica la tradici\u00f3n, as\u00ed que si ustedes usan otro tipo de pan y aceite obtendr\u00e1n de todos modos una deliciosa sopa ribollita muy completa para disfrutar este invierno.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">La receta paso a paso<\/h2>\n\n\n\n<p><em>*La lista de ingredientes con las cantidades exactas la encuentran abajo en la tarjeta de la receta.<\/em><\/p>\n\n\n\n<p>Mondar y lavar las verduras. Picar finamente el apio junto con la cebolla y las zanahorias. Cortar en trozos las papas, en <em>julienne<\/em> la col y en tiras gruesas el <em>cavolo nero<\/em> y las acelgas. Reservar.<\/p>\n\n\n\n<p>En una cacerola grande calentar una buena porci\u00f3n de aceite de oliva, agregar el triturado de cebolla, zanahoria y apio y saltear por 5 minutos a flama moderada.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" data-pin-nopin=\"1\" src=\"https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2017\/11\/4I2B0995.jpg\" alt=\"sofrito italiano salte\u00e1ndose en una cazuela.\"\/><\/figure>\n\n\n\n<p>Agregar las patatas y saltear por 1 minuto. A\u00f1adir el pur\u00e9 de tomate y salpimentar, dejar cocinar a flama media por un minuto.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" data-pin-nopin=\"1\" src=\"https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2017\/11\/4I2B0998.jpg\" alt=\"sofrito y papas salteados en la cazuela.\"\/><\/figure>\n\n\n\n<p>Agregar las acelgas, la col y el kale. Mezclar y dejar cocinar a flama muy baja por 5 minutos.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" data-pin-nopin=\"1\" src=\"https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2017\/11\/4I2B1001.jpg\" alt=\"Agregando el cavolo nero, la col y las acelgas a la cazuela.\"\/><\/figure>\n\n\n\n<p>Licuar la mitad de los frijoles con su respectivo caldo y agregarlos a la cacerola, poner agua suficiente para cubrir todas las verduras, rectificar de sal y subir la flama.&nbsp;Llevar a hervor y dejar cocinar hasta que todas las verduras est\u00e9n tiernas.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" data-pin-nopin=\"1\" cacerola aparte acomodar una capa con algunas rebanadas de pan, poner encima uno o dos cucharones de sopa y continuar haciendo capas de pan y sopa hasta terminar los ingredientes. <\/p>\n\n\n\n<p>Dejar reposar por 30 minutos, mezclar y servir la Ribollita agregando un poco de aceite de oliva extravirgen encima.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">M\u00e1s Recetas de
