What are Huevos Motuleños?

Huevos Motuleños are a speciality from Yucatan, Mexico. The dish consists of fried eggs served on a tortilla, mashed beans and a spicy sauce. On top of all, fried plantains, ham and queso fresco. This IS the ultimate Mexican breakfast!

The recipe’s name comes from Motul, a small city on the Yucatan peninsula in Mexico. It’s a very traditional dish, made with delicious ingredients that are easy to find almost everywhere.

The ingredients

EGGS – They have to be fried. Not poached, not scrambled, fried with a creamy, running yolk.

CORN TORTILLAS – Also fried. Not totally crunchy like a tostada. Neither is too soft that will fall apart easily. Just fried enough to hold well all the weight of the ingredientes on top.

BEANS – Not refried as you might think. The beans are mashed with some liquid, then they’re strained so you’ll end with some sort of thick soup. Beans for this dish have even a name: frijol colado (strained beans). And they’re cooked with epazote (a Mexican cooking herb).

SAUCE – The sauce name is chiltomate and is made with tomatoes, onions, garlic and, the most important ingredient: chiles habaneros (habanero chillies).

TOPPINGS – Peas, ham, fried plantains and queso fresco. Other variations include sour cream and chorizo.

Plantains

Plantains are members of the banana family, in fact, they look very similar. They have a high starch content and are usually eaten fried or boiled. In southern Mexico, plantains are an important part of gastronomy and are often served as a side dish, such as in this recipe.

Plantains can be easily found in many Latin American and Asian grocery stores, but if you can’t find them where you live, you can still make this recipe using raw bananas. Just make sure they’re properly fried-cooked.

How To Make Huevos Motuleños

Put tomatoes, garlic and habanero chillies in a blender. Add 2 cups of water and blend until smooth.

In a small pan fry onions in olive oil until soft and translucent. Add tomato sauce, season with salt and pepper and cook for 10 minutes or until the sauce thickens. Set aside.

Put beans in a blender, add 1/2 cup of water and blend until smooth. Strain and discard solids.

Heat 2 tablespoons of olive oil in a saucepan over medium heat. Stir in onions and sauté until soft and translucent. Add beans and epazote, then let them simmer for about 5 minutes or until they become a thick sauce. Set aside.

Cut plantains into 1,5cm slices. Fry until golden and lightly crispy. Set aside.

Frying plantains.

In a frying pan heat some olive oil and fry the tortillas one by one until they are a little crispy. Place two tortillas, side by side on a plate.

In the same frying pan fry the eggs to your liking. I like mines withe runny egg yolk.

Spoon the beans on each tortilla and place one fried egg on each. Pour the chiltomate sauce and then top with the peas, ham and sprinkled fresh cheese.

Put the fried plantain on the side and serve immediately with your favorite drink, we recommend a traditional café de olla or corn atole.

Tips & tricks

  • Be careful with the habanero chillies. They’re very spicy, so use gloves when seeding them and try to discard also the veins. the flavour whatsoever is delicious, so is still a nice addition to the dish.
  • If you can’t find fresh habaneros but still want to make this dish. Use the canned or dry version.
  • Epazote is not so easy to find in its fresh version, but you can find it dried, and packed in small bags at the Latino markets. Also, the taste is kinda strong, so better add it in small amounts and slowly adjust it to your taste.

  • 2 plantains (or raw bananas)

  • In the same frying pan fry the eggs sunny side up to your liking.
  • Spoon the beans on each tortilla and place one fried egg on each. Pour the chiltomate sauce and then top with the peas, ham, and sprinkled fresh cheese.
  • Add fried plantain on the side and serve immediately.
